What do you like in yours?
Ok, so it’s Shrove Tuesday…. Pancake Day! The chicken likes pancakes. In fact we did a quick survey of the chicken coop to find out how the hens liked theirs. First off – they like them with really fresh eggs – but that’s a chicken thing , ideally you should make them with eggs a few days old (they mix better batter!)
The old favourite of lemon and sugar came out on top as it always does. Although it was very closely followed by bananas, toffee sauce and whipped cream. Blueberries and ice cream in third. Archbishop John Sentamu is apparently a lime and cane sugar fan. Of all the people we asked however the one glaringly obvious thing was; no one likes savoury pancake fillings – except me. I like prawns in a thai red curry sauce in my pancakes. When I revealed that everyone looked at me oddly. Anyway – here is the Muckle Pancake Recipe –
Ingredients
220 g plain flour
1/2 teaspoon salt
2 ‘Muckle’ eggs (that’s large if you hadn’t worked that out!)
550ml milk
2 tablespoons melted butter plus extra butter for the pan.
Let’s make pancakes!
First, take a bowl large enough to hold all of our pancake batter and fill it with the flour. Proper recipes will tell you that you have to sift this from a great height to make sure it’s all separated, but if you don’t that’s really ok. Add in the salt and make a dent in the flour and break those great big ‘Muckle’ eggs into the middle and give it a mix (a hand whisk is good for this – but you can use a fork). Now slowly pour in the milk into the flour and egg mixture whisking/mixing all the time.
Stir until the batter is smooth and then add the melted butter and give it a final whisk together. Now if you have the patience leave the batter mix for half an hour. Once you’ve done that put a little butter in a hot pan, and pour a ladleful of the batter into the pan. Swirl it round to coat the pan and cook until it’s just bubbly, a little dry around the edges, and lightly browned on the bottom. Then flip them over and cook for a minute or so on the other side.
Then top them with whatever you fancy!
